On a perfect pancake quest

Do YOU have a terrific (homemade) pancake recipe?? I can't seem to find one, so I'm on a quest for a good one. I've sadly resorted to buying a pancake mix today:( Not that they're horrible b/c some of them are actually pretty good. I just want to make homemade pancakes for my family. So, can you help me?

Father's Flying Flapjacks Serves 4

1 c. flour
1 T. baking powder
1 T. sugar
1/2 t. salt
1 egg well beaten
1 c. milk
2 T. oil
butter for griddle (or Pam)

In deep bowl, mix first 4 ingredients. In second bowl, mix wet ingredients. Add liquid mix to dry mix and stir til moist. Let rest 30 seconds. Spoon batter onto hot griddle and cook ya up some pancakes. Then have Daddy "FLY" them onto plates by flipping pancake in air and having child/adult catch them on their plate. Make sure your floor is clean first. ;o)

***I NEVER EVER EVER use 2 bowls. Too many dishes!***
